Grilled Chicken Sandwiches

Serves 4


Tired of grilling the same old same old burgers? Surprise the family with these sweet and tangy chicken sandwiches.


Ingredients
2 (8-ounce) boneless chicken breasts
1/3 cup honey
1/4 cup lemon juice
1 clove garlic, minced
4 Kaiser rolls
4 lettuce leaves
4 tomato slices
1/4 cup honey
1/4 cup mayonnaise



1. Heat a charcoal grill until coals form white ash, or preheat a gas grill. Cut each chicken breast in half; pound to a 1/4-inch thickness. Mix honey, lemon juice and garlic in a shallow baking dish. Reserve about 1/3 of the marinade in a small bowl.

Add chicken to marinade in baking dish and turn to coat. Place chicken on grill rack. Discard marinade in dish. Grill chicken, turning and basting with reserved marinade, until cooked through, about 10 minutes.

Combine  honey and mayonnaise in a small bowl and mix well.  
 
4.
Split each roll in half. Top the bottoms with lettuce, tomato and chicken. Drizzle honey sauce over chicken; replace tops. Serve immediately.
